Flours of Ancient Maize

The traditional maize-growing areas are the Lower Susa Valley, Canavese and the plains between Turin and Pinerolo.
From the valuable maize grown in these areas, polenta flours of superior quality and taste are obtained.
These flours are also used to make 'paste di meliga' (cornflour biscuits), made according to a specific production specification.
Their production area is the entire province of Turin.
