The restaurant is located in the Porta Palazzo district, on the corner of Piazza della Repubblica, where Europe's largest open-air market is held. One of the main features of Berberè's pizza is its high digestibility, achieved by using only live sourdough and a 24 h rise at a controlled temperature. Soft inside and crispy outside, the pizza is served already cut into 8 slices to stimulate sharing among diners. In addition to the classic dough, handcrafted daily from water, yeast and stone-ground organic semintegral flours, it is also possible to find some alternatives of the day with grains other than wheat (enkir and spelt) or with hydrolysis of starches, an ancient leavening technique, totally free of added yeast. In addition, from Monday to Friday you can take advantage of the 10-euro lunch formula that includes pizza of the week, drink or small beer, cover charge and coffee.
