Recipe of the month

A “Caponét” is a Savoy cabbage parcel filled with a meat, egg and Parmesan cheese paste and then oven-cooked with a few flakes of butter.

 

The etymology of the name is uncertain, but it is believed to mean “little capon” due to the shape of the small parcels.
